B is for Bok Choy

Bok Choy is now one of my new favorite veggies.

Before I discovered it, I thought it was an elite Asian food I would never be able to prepare.  Turns out, it's a very common veggie - the bottom half is a mix between celery (without the strings) and a cucumber. It's crunchy and watery and great for a stir-fry.

The top green leaves cook down like spinach and can be added to anything. It's a mild, anti-inflammatory food and shouldn't be repulsive to a 5-year old.

Any vegetable a 5-year old won't fight is a good thing.

Sounds like a great multi-purpose vegetable. I don't think we've ever cooked with it (for 'we' read 'hubby'!)

I, too, thought it was some exotic food! I used to be very good about trying new foods and recipes. It was one of the first things to go when the kids grew older and I became more of a driver in the afternoons. We'll see if I can get this into the rotation this summer.

Interesting. The doctor wants me to eat a ton more fiber (yippie) and has introduced me to Kale. That is adventurous as I've been lately. If it goes well, perhaps I'll try this one too.

I've learned something new today. I've never had Bok Choy and knew nothing about it. I think I would like it!
